From Vine to Wine: an “Insider’s Languedoc Wine Experience” ‘First Adventure Starting October 2012’

Chateau Les Carrasses and Wine Hunters are launching an ‘All Inclusive’ Wine Vacation Week that will provide you with an exciting in depth and interactive experience of how the finest wines are created.

Hosted by me, Alan Hunter, this unique journey starts with a relaxed welcome dinner at Les Carrasses and introduction, including a great fun wine event by Master of Wine Mathew Stubbs.

The real adventure begins the next morning with a series of guided walks and talks in the vineyards, meeting some of the region’s best wine makers and discovering their craft [and secrets] The experience continues throughout the week with visits to wineries, lunches and dinners with winemakers in spectacular venues, tasting wine from bottles and barrels so you can learn about the process of winemaking from “terroir” and grape varieties, through harvest and fermentation, to ageing, blending and bottling. During the “assemblage” you will create your own wine, guided by renowned oenologist - David Alcaraz.

As ‘Vine to Wine’ suggests, this is all about the ‘insider experience’ – a chance to ‘harvest’ the combined local knowledge of the WineHunters and Chateau Les Carrasses team in first hand interaction with the best of the region’s winemakers - learning about their passions and expertise and how they translate this into the finest of Languedoc wines.

French wine makers call it ‘Expression de Terroir’, the entire process from ‘Vine to Wine’ that results in the finest of wine – wine that expresses with elegance its provenance - the soil, grape variety, climate, location and most essentially the character of the individual winemakers themselves.

We have harnessed a whole year’s wine development process into one exciting week for you to enjoy, along with delicious local cuisine to savour as you taste the best wines from this most fascinating region, but also with plenty of time to relax and enjoy all the facilities Chateau Les Carrasses has to offer.

This special wine tour experience is also a great chance to share with friends and we have wonderfully designed accommodation to suit parties of four, six, eight or more. The Programme:

Each day we cover a different aspect of the wine making process and a different appellation of Languedoc wines. Please note that changes may be made to the programme at any time based on weather or other influencing factors.

Day 1: Arrival and Wine Discovery Dinner at Les Carrasses

Day 2: A day in the Vineyards - Learning about the vines, planting, pruning, sun and wind direction - all the essential factors so crucial to establishing the natural quality of the vines – ‘wine growers lunch in the vineyard’ – dinner at the Chateau

Day 3: “Terroir” - The climate, landscape and soil that make the difference to the individual characteristics of grape production – afternoon at your leisure – dinner at the Chateau

Day 4: Harvest, fermentation and winemaking – afternoon at your leisure – dinner at the Chateau

Day 5: From vines to vineyard – ‘talk and tasting’ on the beautiful Canal du Midi with lunch – afternoon at your leisure

Day 6: Viniculture – assemblage - blending and bottling - creating your own wine! – dinner at the Chateau

Day 7: Viniculture – maturation and ageing - afternoon at your leisure followed by a Gala Dinner at Chateau les Carrasses
